Ingredients:

• 2 Eggs 
• 1/8 tsp Ground Nutmeg 
• 1 ½ tbsp Parmesan Cheese (Grated)

• Salt and Pepper to taste 

How to make Baby Spinach Omelet:

• Beat eggs and stir in the baby spinach and parmesan cheese. Season it with onion powder, nutmeg, salt and pepper.
• In a small skillet coated with cooking spray, cook egg mixture for 3 min until partially set. Flip with a spatula and continue to cook for 2-3 min. Reduce heat to low and continue to cook for 2-3 min more.
• Baby Spinach Omelet is ready to serve.

Ingredients:

• 5- 6 Baby Corns 
• 2 Capsicums 
• 2 Onions 
• 1/4 cup Spring Onions, chopped 
• 3- 4 tbsp Coriander Leaves, chopped 
• 1 Tomato, chopped 
• 1 tbsp Tomato Sauce 
• 1 tbsp Soy Sauce 
• 1 tbsp Chilly Sauce 
• Salt (to taste) 
• ¾ cup Water 
• 2 tsp Chilly Powder 
• 1 tbsp Corn Flour

How to make Corn Capsicum:

• Boil the corns and slice them into 1-inch slanting pieces.
• Wash onions and capsicums & then dice them into square-shaped pieces, of approx 1 inch.
• Now, take a deep bottomed pan and heat some oil in it. When the oil becomes hot, fry onion pieces in it.
• Add chopped tomatoes to it and fry till they turn soft. Add chopped coriander leaves and spring onions and fry for a minute.
• Sprinkle some water and chilly powder over the above mixture and mix well.
• Add capsicum, salt, baby corns, tomato sauce, soy sauce and chilly sauce to it and saute them well, for 3 minutes.
• Dissolve the corn flour in some water and add to the mixture.
• Now, add the remaining water and mix well. Cook till the mixture gets a gravy consistency.
• Serve hot.

• Cover the egg yolks wiht a thin layer of the paste.

• ½ kg Paneer (cut into 1½ inches cubes) 
• 3 tbsp Tandoori Powder 
• ½ tsp Red Chili Powder 
• 2 tsp Garam Masala 
• 2 tsp Cumin Powder 
• 2 tsp Coriander Powder 
• 2 tsp Ginger & Garlic Paste 
• 1 Onion (chopped) 
• 1 Capsicum (cut into 1-inch pieces, deseeded and cored) 
• 1 cup Thick Yoghurt 
• ½ Bunch Coriander Leaves (chopped) 
• 2 tbsp Lemon Juice 
• 3 Lemons halved and Chaat Malasa (serving) 
• ¾ tsp Caraway seeds (crushed) 
• Oil 
• Salt (to taste)

How to make Tandoori Paneer:

• Cut onions into 1½ inch pieces, separating each layer of the onion.
• Cut the capsicum, tomato, onion and paneer into same size.
• Mix the remaining ingredients into the yoghurt.
• Add vegetables and paneer into yoghurt mixture.
• Mix them well and marinate in the fridge for least for 8 hours.
• Now take skewer add one piece of paneer, capsicum, paneer, onion, paneer, tomato.
• Grill it for 15 min.
• Remember to brush it with marinate several times while grilling.
• Lastly apply oil.
• During grilling turn the skewers slowly.
• Sprinkle chaat masala over the grilled panned & vegetables.

Suggestions: serve with tomato sauce or green chutney.

• 1 1/2 tsp Red Chili Pepper 
• 1/2 cup Mustard Oil

• 4 tsp Aniseeds 
• 1/2 kg Raw Mango Slices

How to make Sliced Mango Pickle:

• Add salt to the chopped raw mangoes; set it aside for 8 hours approximately.
• Remove the slices and add glacial acetic acid to the mango water; set it aside.
• Heat mustard oil in a pan.
• Add onion seeds, aniseeds, fenugreek, red chili pepper and salt.
• Fry it for about 5 seconds.
• Allow it to cool; add the mixture to the mango water.
• Spoon to a jar and keep it aside for about one week.
• Mix the mixture every day for better results.

Suggestions: Serve it with chapatis or rotis.

• Turn down the heat to low and cook till eggs are browned on the bottom.
• Using a spatula, loosen the bottom of the omelet and invert it on the other side.
• Cook till the eggs are set and done.
• Remove and transfer on a serving plate.

• Add hot water with peanut butter, lime juice, soy sauce, sesame oil and red pepper flakes until it blends well.
• Heat oil over in a large pan over medium heat. Add red pepper, broccoli, green onions and garlic. Stir-fry 3-4 minutes until vegetables are tender crisp.
• Remove it from heat and stir the peanut butter mixture.

Ingredients:

• 1 kg Basmati Rice 
• 1 kg Chicken (cut into cubes) 
• 100 g Oil 
• 400 g Onions 
• 200 m Yogurt 
• 1 tsp Garam Masala Powder 
• 1½ tbsp Ginger-Garlic Paste 
• 1 tsp Red Chili Powder 
• Salt (to taste) 
• Few Coriander & Mint Leaves (chopped) 
• 200 g Tomatoes (chopped) 
• 2 tsp Whole Garam Masala 
• 2 Lemons 
• Butter (for greasing)

How to make Kachi Biryani:

• Combine garam masala powder, red chili powder, ginger-garlic paste, yogurt, mint, coriander leaves, and whole garam masala together. Grind into a fine paste.
• Marinate chicken with this mixture and set aside for 4 hours.
• Rinse rice and soak for 30 minutes.
• Heat oil and fry onions until brown.
• Add tomatoes and stir fry for few minutes.
• Place the onions and tomatoes over the chicken.
• Add juice of one lemon.
• Boil rice for 2-3 minutes and drain excess water.
• Butter a pot and place in the marinated chicken.
• Add the remaining oil from browned onions over the chicken.
• Spread the rice over it. Cover tightly with a foil.
• Place it on high flame for 5 minutes and reduce the heat. Cook for 15 minutes.
• Remove from heat and let covered for another 15 minutes.
• Serve hot with raita or chutney.

• Add garam masala, pepper powder, and turmeric powder. Mix and cook well.
• Add mushrooms and stir well.
• Flavor with salt to taste and cook covered for 10 minutes.
• Add chicken and cook for another 6-8 minutes, stirring continuously.
• Serve hot with rice.

• Mix well and shape the mixture into small balls. Avoid too hot mixture so as to prevent the melting away of sugar.
• Arrange the laddoos in a plate and garnish them with chopped almonds and pistas.
• Til-Khoya Ladoo is ready to serve.

• 1/2 Bunch methi leaves 
• 1 Cup wheat flour

• Heat a tava and roast rolled out theplas on it.
• Roast both sides properly. Apply little oil on the turned side of each thepla. Repeat the procedure with the other side.
• Remove when well roasted.

• 1/2 kg Turnips 
• 1/2 Cup Onions (chopped)

• 3 tsp Sesame seeds 
• 3 tsp Coriander seeds

• 3 tsp Almonds

How to make Turnip Curry:

• Dry roast all the seeds, almonds and coconut in a frying pan and grind to a fine paste. Add to the yoghurt with ground spices and set aside.
• Heat oil, add sliced onions and fry until light brown.
• Wash the turnip and cut into pieces.
• Add the turnips to the pan and fry until light brown.
• Add yoghurt mixture and fry for about 5 min.
• Add 1/4 cup water, cover and cook over very slow fire until turnips become tender, and a thick gravy has formed.
• Add salt to taste.
• Turnip Curry is ready.

• For Kofta: 
• 2-1/2 Cup Mashed Cheese 
• 4 tbsp Gram flour 
• Oil for frying

• 3 tsp Oil 
• 1 tsp Turmeric Powder 
• 2 tsp Coriander Powder 
• 2 Green chilli 
• 400 ml Milk 
• 1 Onion (finely chopped) 
• 2 Tomatoes (finely chopped) 
• Salt to taste 

How to make Malai Kofta:

• Make a soft dough by kneading the cheese.
• Roll out small balls of equal size and wrap each of them in gram flour.
• Heat oil in a frying pan. Fry the cheese balls until they turn golden brown.
• Take a kadhai with sufficient oil and fry the onions until they become pink.
• Add turmeric powder, coriander powder and green chillies to it.
• Add tomatoes and fry them well till the mixture gets separated from oil.
• Now pour the milk and allow it to boil. Keep stirring periodically.
• Boil for about 5 to 7 minutes and add fried balls.
• Allow boiling for another two minutes.
• Malai Kofta is ready. Serve hot with chapati.

Ingredients:

• 330 gm Tomatoes (peeled, de-seeded and chopped) 
• 3 tbsp Red Wine Vinegar 
• 1 Spring Onion (minced) 
• 250 gm Asparagus

• 2 tsp Sugar 
• 1/4 tsp Salt 
• 1 tbsp Water 

How to make Asparagus and Tomato:

Discard the tough ends of Asparagus and cut them into 3-inch pieces.
Add water, vinegar, salt and sugar to a pan and bring it to boil over medium heat. Keep it aside.
Now heat the oil in a heavy nonstick skillet over medium flame.
Add in asparagus and saute for 3 minutes. Add the spring onions and chopped tomato pieces.
Now add the water, vinegar, sugar, salt mixture to it, stir properly and cover the skillet.
Simmer for another 5 minutes.
Add pepper to taste and serve hot.

Things Required 

• Muslin Cloth

How to make Low Fat Paneer:

• Take a broad pan and pour milk in it. Place it on flame and allow it to boil.
• When the milk starts boiling, add low fat curd in it and mix well.
• When it is completely boiled, remove it from heat and stir it gently. The milk will get sour.
• Now, tie the sour milk in a muslin cloth, let it strain and hang it for around ½ hour.
• It will turn into thick paneer. Use it as required.

• 2 Onions, chopped 
• 2 tsp Ginger-Green Chili Paste 
• 1 tsp Cumin Seeds (jeera) 
• 1 tsp Chana Masala Powder 
• 1 tsp Garam Masala Powder 
• ½ cup Curd 
• Salt (as per taste) 
• Oil (as needed)

How to make Chana Palak:

• Soak chickpeas in water, for 5 hrs and boil them till they get soft. Keep it aside.
• Chop and rinse spinach leaves and then boil them for 5 minutes.
• Now, take a pan and put 2 tbsp oil in it. When the oil is hot, put cumin seeds in it.
• When the seeds start to crackle, put chopped onions in the pan and fry till they start turning brown.
• Add the ginger chili paste and fry for a few more seconds.
• Put curd in the above mixture and fry till the masala cooks well.
• Add garam masala and spinach to it and mix well again.
• When done, add boiled chickpeas and salt to the above mixture and reduce the heat to simmer. Let the mixture cook for a few more seconds.
• Once the gravy is prepared, sprinkle coriander leaves on it.
• Now, in a small pan, heat 1 tbsp oil and add chana masala in it.
• Pour this mixture over the gravy and serve hot, with rotis.
