Ingredients:
• 2 Pounds lean ground turkey 
• 1/2 Cup fresh cilantro, finely chopped
• 1/4 Cup low sodium soy sauce 
• 1 tbsp Freshly ground black pepper 
• 3 tbsp Paprika 
• 2 tbsp Minced garlic 
• 1 tbsp Gound dry mustard 
• 1 tbsp Gound cumin 
• 2 Fresh green chile peppers, diced 
• 1 Medium red onion, diced 
• 1 Dash worcestershire sauce 
• 1 tsp Salt 
• 1 tsp Minced fresh ginger root

How to make Turkey Burger:
• Preheat the grill for high temperature.
• In a bowl combine the ground turkey, garlic, ginger, red onion, chile peppers, salt, soy sauce, black pepper, cilantro, paprika, cumin, mustard and Worcestershire sauce.
• Shape the mixture into 8 burger patties.
• Lightly oil the grill grate and put the turkey burgers on the grill.
• Cook for about 5 to 10 minutes per side, till well done.

How to make Asparagus Omelet:
• Steam the asparagus pieces for five minutes until tender.

• In a large non-stick skillet, fry bacon pieces over high flame until golden brown. It takes about 3 minutes.
• Add chopped onions and fry again until onions turn translucent.
• Add asparagus and cook until heated through.
• Reduce the flame to medium and spread the mixture in the skillet.
• Take the egg mixture and pour it over asparagus.
• Cook till eggs are softly set. Tilt the skillet to allow uncooked egg to flow underneath. Transfer the omelet to a plate and fold it.

• Now strain the soup, discarding the vegetables.

How to make Fish Kebab:
• Rinse fish with cold water and pat dry.
• Now cut into 1 inch cubes and set aside.
• Mix all the ingredients to make a marinade.
• Pour this into large freezer bag and add the fish cubes.
• Make sure fish is well covered by marinade.
• Place freezer bag in the refrigerator for two hours.
• Take away fish from marinade.
• Discard the marinade and assemble fish cubes.
• Spray the grill lightly with cooking oil and place the fish kebabs on the grill.
• Cook for about 4-6 minutes each side or until the fish flakes easily with a fork.
• Fish Kebab is ready to be served .

• Add the remaining spices and sauté properly.
• Lid the pan and cook for another 5 minutes.
• Remove the lid and add lime juice and coriander. Mix gently.

How to make Cabbage Kofta Curry:
• Mix items 1-6 for the kofta and make a batter.
• Pour small round lumps of the batter in hot oil.
• Deep fry and keep aside.
• Heat some more oil in a pan and add the jeera, coriander and poppy seeds.
• Add to it and fry the rest of the sliced onion till it turns translucent.
• Now grind to a paste cloves, cardamom, cinnamon, ginger and cashew andtomato.
• Add the masala paste to the onion fry.
• Keep frying till the oil starts to separate from the onions.
• Add 1 tablespoon of yogurt and mix well.
• Add salt and enough water to make a think gravy and bring the mixture to a simmer.
• Add the deep fried koftas and heat through.
• Serve hot with chapattis or rice.

• 250 gm Black Lentils (Urad Daal) (soak 4 hours)

• 3 Green Chilies (slit in mid) 
• 5 tbsp Tomato Puree

How to make Maa Ki Daal:
• Wash the lentils and peel off the skin.
• Put the lentils to the pressure cooker and add water to it.
• Fix the gasket inside the cooker lid and attach it to the base.
• Put it on medium heat and after three whistles,keep it off the stove.
• Allow it to cool and then put the dal to a vessel where you can slightly mash it with a heavy ladle.
• Take a heavy large pan and place it over at medium heat.
• Pour the butter in it
• Add the ginger and garlic pastes.
• Stir for three minutes then add green chilies, tomato puree, chili powder and salt one after the other.
• Stir the ingredients for 5 minutes and the boiled lentils.
• For about ten minutes stir the lentils then add cream and chopped coriander.

Suggestions:
Best served it with roomali roti, rice, paratha, naan or tandoori roti.

• Pressure cook for 20 min on a medium heat.
• Now take out all the bones and make small pieces of the chicken.
• Take a pot; add chicken pieces, corn and water.
• Cook at medium heat for about 10 min and stir it slowly.
• To make a thick liquid take a cup water and mix the corn flour
• Add this liquid to the chicken and corn.
• Stir well while mixing.
• Now put the remaining ingredients.
• Cook at a high heat and mix salt if needed.
• Garnish it with coriander leaves.

• 5 Fresh Sage Leaves 
• 16 ounces Dried Cannellini Beans (or white beans)

• 3 cloves Garlic (minced)

• 9 tbsp Olive Oil

• 8 oz Ziti or Tubular Pasta (short)

How to make Bean and Pasta Soup:
• Soak the beans a night before in cold water. In the morning, drain and rinse them.
• Take a large stew pot and put beans in it, along with whole garlic, water, sage leaves and 3 tbsp oil.
• Bring the beans to a boil and cook them on simmer for approximately 1 hour. Make sure they are tender.
• In the meantime, take a small skillet and heat 6 tbsp of oil and garlic and stir for 1 minute.
• Now, add cayenne pepper flakes, tomato paste, salt, pepper and fresh rosemary leaves in it and stir again.
• Take the cooked beans and add the above mixture in it. Stir well again.
• Pass soup through food mill, pour it in the stew pot and cook on low heat, till it is slightly thick.
• Cook the short pasta in a pot, with water and salt added to it, until it becomes soft. Drain the water and add soup in it.
• Again cook it for 15 minutes and serve hot.

• In a pressure cooker add moong Dal, rice, black peppercorns, cumin seeds ,salt, asafoetida and water.
• Keep it in medium up to 5-6 whistles after 15 minutes transfer it to serving bowl.
• Heat ghee in a pan and add, green chilies, curry leaves, cumin powder, cashew nuts, pepper powder fry it for 2 seconds.
• Once done with frying add it to serving bowl and mix it well.

Suggestions:
Serve with coconut chutney or curd raita

• Now add boiling water over the bread pieces and squeeze dry.
• Mash the bread pieces. Add potato flour, raisins, almonds and sugar to the bread.
• Add the egg yolk and cooked cabbage; mix until smooth.
• Beat the egg whites until stiff but not dry and add into the mixture.
• Pour the mixture into a greased casserole and put it in an oven preheated at 350 F oven for 40 minutes, or until set.
• Cabbage Kugel is ready. Serve hot.

• Grease your palms with ghee and make laddoos.

• Take a large bowl and mix sugar, lemon peel, flour, salt and baking powder in it.
• Now add milk, vanilla, almond extract, eggs and butter in it and stir well.
• Take a greased pan of 13x9 inch size and pour half of this thick batter into it.
• Put blueberries over it and cover the blueberries with the remaining batter.
• Bake it for 35 minutes and allow it to cool for half an hour at room temperature.
• Take hand blender and blend all the ingredients required for icing.
• Spread the icing over the warm cake and serve.

Ingredients:
• 4 Tomatoes (finely chopped) 
• 1 whole Chicken (chopped)

• 2 tsp Ginger Paste 
• 50 gm Garlic Paste

• 100 gm Shallot (chopped in cube) 
• 5 Green Chilies (slit in the middle) 
• 1 strand Curry Leaves 
• Oil 
• Salt to taste

How to make Kerala Chicken Masala:
• Take a heavy bottom saucepan and place it at a medium heat then pour oil into it.
• Add the green chilies and fry it for a minute.
• To it now add turmeric, fennel, red chili, cloves, ginger, garlic and cinnamon.
• Stir fry for five minutes or when it smells aromatic.
• Mix the shallot and stir for three minutes then add the tomatoes with salt.
• For seven minutes stir it fry then add the chicken pieces.
• Pour water after stirring it for ten minutes then lower the flame and tight seal the saucepan.
• Fifteen minutes later open the lid and stir the chicken then cover it for another ten minutes or when it is tender.
• Turn off the flame when the meat is cooked and appears dry.

Suggestions:
Best serve it with roti, pulao, veg-briyani or rice.

Batata Vada is a Maharashtrian dish in which besan is used to dip potato. Learn how to prepare Batata Vada by following this easy recipe.





Ingredients:
• 2 Cups besan 
• 3/4 lb Potatoes 
• 2 tbsp Grated coconut 
• 4 Onions, chopped finely 
• 4 Green chillies 
• 4 Cloves garlic 
• Sugar to taste 
• Juice of one lime 
• A few sprigs coriander leaves, chopped 
• 1 tsp Mustard seeds 
• A small piece ginger 
• 1 tsp Turmeric powder 
• 1/2 tsp Red chilli powder 
• 1 tsp Cumin seeds 
• A pinch of baking soda 
• Oil for deep frying 
• Water as required 
• Salt to taste

How to make Batata Vada:
• Cook potatoes into the Pressure cooker until soft.
• Peel and mash them, keep aside.
• Grind green chillies, garlic and ginger together to make a fine paste.
• Combine this paste, potato, onions, coriander leaves, sugar, lime juice and salt, mix well.
• Take a pan and heat a little oil and fry mustard seeds and curry leaves until the mustard crackles.
• Remove it from the heat and add it to the potato mixture.
• Take another bowl and combine besan, salt, cumin seeds, red chilli powder, baking soda, coconut, turmeric powder and little water in it, to make a thick batter.
• Add a tsp of hot oil to the batter.
• Make small balls from the potato mixture.
• Dip each ball in the batter and deep fry until golden brown.
• Serve hot batata vada with chutney or tomato sauce.
