Stuffed Capsicums

Ingredients:


• 12 medium sized Green Capsicums

• 3 Potatoes (boiled and mashed)

• 200 g Cottage Cheese (paneer), (grated)

• 1 large Onion (chopped)

• 1 inch piece Ginger (chopped)

• 3 Green Chillies (chopped)

• 10-12 Cashewnuts (coarsely ground)

• 12-15 Raisins

• 1 tsp Cumin Powder

• 1 1/2 tsp Red Chilli Powder

• 1 tsp Garam Masala Powder

• 2 tsp Dry Mango Powder (amchur)

• 1/2 cup Cheese

• Fresh Coriander Leaves (finely chopped)

• Salt to taste

• 2 tbsp Oil


How to make Stuffed Capsicums:

• Cut off the head of the capsicums and deseed them. Trim the bottom off the capsicum to allow it to stand still when cooking.

• In a bowl, mix together the potatoes, paneer, red chilli powder, dry mango powder, cumin powder, garam masala powder, cashew nuts, raisins, coriander leaves and salt and keep aside.

• In a pan, heat oil and cook onion till they turn pink and add green chillies and ginger to it.

• Add in the potato mixture and cook for two minutes. Remove from heat and divide the mixture into equal portions.

• Stuff the capsicum with the potato mixture and cover it with grated cheese.

• Preheat the oven 225 ºC and microwave the stuffed capsicums for fifteen minutes.

• Serve hot.

How to make Brownie Caramel Cheesecake:

• Preheat oven to 350 degrees F.

• Butter a 9-inch springform pan.

• Combine brownie mix, 1 egg, and water in a large mixing bowl.

• Pour into the prepared pan and bake for 25 minutes.

• Melt caramels in milk over low heat in a heavy saucepan, stirring constantly, until it reaches to a smooth consistency.

• Pour this caramel mix over the warm, baked brownie crust, reserving 1/3 cup.

• Beat cream cheese, sugar, and vanilla together with an electric mixer until smooth.

• Add the remaining 2 eggs, one by one, and beat well after each addition.

• Pour this cream cheese mixture over the caramel mixture and bake for 40 minutes.

• Chilled thoroughly and remove from the pan (loosen the edges by a knife).

• Heat reserved caramel mixture and spread over the cake.

• Pour the chocolate fudge topping all over and spread evenly.

• Slice and serve.

• Mint Sprigs (for garnishing)


How to make Fresh Fruit Sorbet:

• Take a large bowl and spread the sliced fruit in it.

• Cover the fruit with 2 tablespoons of lemon juice, to prevent it from browning.

• Place the bowl in the refrigerator, until well chilled.

• Mix together the remaining lemon juice, orange juice, sugar and salt. Stir well till the sugar is dissolved.

• Pour the juice in a plastic container and place it in the freezer.

• Remove after an hour and process it in a blender.

• Put it back into the freezer, until completely frozen.

• To serve, place some mixed fruit in a dessert style bowl.

• Scoop out some frozen juice over the fresh fruit and garnish with fresh mint sprigs.

Ingredients:


• 300 g Lychees (roughly chopped)

• 2 tbsp Basmati Rice (soaked and coarsely ground)

• 5 cups Milk

• 1/2 cup Sugar

• 3 tbsp Mawa (khoya) (grated)

• 1/2 tsp Green Cardamom Powder

• 12 Almonds (blanched and slivered)

• 12 Pistachios (blanched and slivered)

• A few drops Rose water


How to make Lychee Kheer:

• In a thick-bottomed pan, take the milk and bring it to a boil stirring all the while so that cream doesn’t form on the top.

• Add the coarsely ground rice to the milk and cook till done.

• Now add khoya, sugar and chopped lychees and stir for two minutes.

• Add green cardamom powder and rose water and mix well and remove the kheer from heat.

• Allow it to cool and serve garnished with almonds and pistachios.

• 1/2 tsp Red Chilli Powder

• 1 tsp Chaat Masala

• 1 marble-sized Tamarind (Imli)

• Salt to taste

• 1/2 tsp Sugar

• 2 tbsp Oil

• 1/4 cup Fresh Coriander Leaves (chopped)

• 1 tbsp Lemon Juice


How to make Sweet Potato Chaat:

• In a pan, heat oil and add cumin seeds. When they begin to splutter, add the potatoes and the sweet potatoes and stir-fry for 2 minutes. Transfer it in a big bowl and keep aside.

• Add chopped green chillies, salt, chaat masala and red chilli powder to the potatoes and toss.

• In a small bowl, soak tamarind in water and microwave on high for two minutes. Squeeze out the pulp.

• Add the tamarind pulp, sugar and chopped coriander leaves into the potatoes and toss again.

• Squeeze some lemon juice and mix lightly.

• Just before serving garnish it with curd & sev then serve.

• Now add vanilla essence. Also mix few drops of food coloring.

How to make Italian Pizza:

• Cut off the top of the bread and hollow out.

• Combine tomato sauce with chopped tomatoes, cubed Mozzarella, basil, Swiss cheese and the cubed sausage or salami, mix well.

• Stuff the toasted loaf with the mixture.

• Sprinkle with pepper, salt, garlic, oregano and grated cheese.

• Place the pizza on a cookie sheet and bake at 400 degrees F for about 15 minutes till the loaf is golden brown and the filling is piping hot.

• Mix in red chili powder, soya sauce, vinegar, red chili sauce, and salt. Cook for another 2 minutes.

• Pour enough water to half cover the chicken and cover the pan. Cook for 5 minutes.

• Uncover and cook until the gravy absorbs in completely.

• Serve hot.

Ingredients:


• 250g Capsicum (cut into two pieces each)

• 2 tsp Coriander Seeds

• 25g Sesame Seeds

• 25g Peanuts

• 25g Dry Coconut (grated)

• 1/4 tsp Mustard Seeds

• 1 bunch Curry Leaves

• A pinch of Fenugreek Seeds

• 50g Tamarind

• 75g Oil

• Salt (to taste)


How to make Capsicum Masala Curry:

• Roast coriander seeds, peanuts, sesame seeds, and dry coconut without oil, until golden.

• Cool and blend in a food processor, to make a smooth paste.

• Heat oil in a pan. Fry mustard, fenugreek seeds and curry leaves for a minute.

• When the seeds flutter, add capsicum. Fry for a while and transfer to a separate bowl.

• Fry the ground paste in the remaining oil until the oil separates.

• Add chili powder, tamarind water and salt. Cook until the gravy becomes thick.

• Now, add fried capsicum to the gravy and remove from heat.

• Garnish with coriander leaves.

• Serve hot.

Undrallu / Kudumulu

HAPPY VINAYAKA CHAVITHI..
Undrallu are one of the Vinayaka Chavithi specials. They are also known as Kudumulu in some places. They are made with rice ravva and chana dal. You can prepare them in two methods, I will give both ways below – you can choose the best method that fits you.



Ingredients:


Rice ravva – 1 Cup

Chana dal – 1/8 Cup

Water – 2 1/4 Cups

Ghee/Oil – 1/2 tsp

Salt    

 How to make Undrallu: 

 Pan Method:

Wash and soak chana dal for 30 mins in 1/4th cup water. do NOT drain it.

 In a narrow pan like sauce pan, add oil/ghee and soaked chana dal with water and 2 more cups of water. Let it boil until chana dal is 3/4th cooked.

 Now add rice ravva and stir well so there are no lumps. Add salt and when this is boiling, cover with lid and let it cook under minimum flame for about 10 mins.

 Open the lid and check if the ravva is cooked well by taking little amount with fingers and pressing it. If this is soft, its done. If you still have ravva nature, cook for around 5 more mins.

 Remove the cooked mixture into a big plate or container and allow it to cool for about 10 mins or until you can touch with your palms.

 Now take a palm full of cooked ravva into your palms and make into balls pressing with your two hands.    
Pressure cooker Method:

 Take rice ravva , chana dal, salt, oil and water into a cooker bowl and pressure cook as you cook the rice.

 When pressure is all gone, remove bowl from cooker and allow it to cool in a big plate or container and make them into balls.  
Tip:  Put a bowl of water beside you to wet your hands frequently while making the balls. Wetting hands while making each ball prevents the rava sticking to your hands while pressing them.  

Sweet Kachori

Sweet Kachori is a traditional Maharashtrain recipe. Learn how to make/prepare Sweet Kachori by following this easy recipe.



Ingredients:


• For cover:

• 250 gm Plain flour

• 1 tbsp Corn flour

• 30 gm Ghee

For filling:

• 200 gm Khoya

• 50 gm Milk powder

• 1/2 tsp Nutmeg, cardamom, and cinnamon powder

For syrup:

• 250 gm Sugar

• 1 Cup water

• 1 Big pinch saffron

• Ghee for deep frying


How to make Sweet Kachori:

• Mix khoya, milk powder and other ingredients for filling.

• Take a big bowl and combine plain flour, corn flour and ghee.

• Using water, knead it to pliable dough. Now cover it with a wet cloth.

• Boil sugar and water to form syrup, add one tbsp of milk also.

• Boil until the syrup is slightly sticky between the fingers.

• Crush and add the saffron.

• Prepare 15 to 16 flat balls from the mixture.

• Divide the dough into 15 to 16 parts.

• Roll one ball into a puri and put one mixture ball in the centre.

• Pull up all the sides to seal the mixture, and press in the centre.

• Make 5 to 6 kachoris.

• Heat ghee and fry them on low flame until light brown, turning once.

• Repeat the process for remaining kachoris.

• Make a hole in the centre of each (approx. 2 cm diameter), when slightly cool.

• Pour half tbsp of syrup and roll kachori around to let the syrup spread.

• Allow to stand for about half an hour before serving.

• 4 Boiled Eggs.

• 1 tsp Red Chili Powder

• ½ tsp Turmeric Powder

• 2 Cloves

• 1 Piece Cinnamon Stick

• ½ tsp Garam Masala Powder

• 1 tsp Poppy Seeds

• 1 tsp Jeera

• 1 Big Onion ( Sliced)

• 2 Piece Cardamon

• 2 Tomatoes ( Chopped)

• ½ Cup Coriander Leaves ( Chopped)

• 1 tsp Saunf

• 12 Curry Leaves

• Oil

• Salt( to taste )


How to make Andhra egg curry:

• In mixer add coconut, saunf, poppy seeds, garam masala, red chili powder and salt and make a paste.

• Heat up the oil in the pan add cardamom, cinnamon ,cloves and jeera and then add onion.

• Fry until it become brown.

• Then add green chili and curry leaves and fry it for 2 min.

• Add ginger garlic paste and fry until the raw smell goes.

• Add chopped tomato and fry for 5 min or until till it become soft.

• Add grinded paste and cook in low flame and fry for 3 min.

• Add 1 ½ cup water bring it to boil and eggs cook it 5 min.

• Garnish with coriander leaves and serve.

Ingredients:


• 1 medium sized Pineapple (finely chopped)

• 3 tbsp Ghee

• 2 cups Khoya (grated)

• 1/4 cup Sugar

• 1/4 cup Sunflower Seeds (Chironji)

• 1 tsp Green Cardamom Powder

• 15-20 Cashewnuts


How to make Ananas Ka Meetha:

• Heat 1 ½ tbsp of ghee in a wok (kadhai) and sauté the pineapple in it for five minutes until the water evaporates.

• Add sugar and stir till entirely dissolved.

• Now, add in the green cardamom powder to the pineapple and cook for some time.

• In another pan, heat the remaining ghee and add sunflower seeds and cashewnuts. Cook till golden.

• Add it to the pineapple and mix well.

• Add khoya and cook till done.

• Serve hot, garnished with cashew nuts.

Beetroot Halwa is a tasty Indian Dessert. Learn how to make/prepare Beet Root Halwa by following this easy recipe.



Ingredients:


• 1 kg Beetroot (peeled off, washed & finely grated)

• 2-1/2 Cups sugar

• 1/2 Liter milk (boiled)

• 2 to 3 Cups of water (sufficient to boil the beetroot)

• 8 Cashew nuts

• 8 Raisins

• 2 tbsp Ghee


How to make Beetroot Halwa:

• Pour water in a shallow pan (kadahi) and add grated beetroot.

• Put a lid on the pan and simmer well until water gets evaporated.

• Add sugar and half of the milk, stir constantly until the mixture achieves a thick consistency.

• Now add ghee and stir well.

• Add remaining milk and simmer again for just 1-2 minutes on low heat.

• Take off heat and garnish with cashew nuts and raisins.

• Beetroot Halwa is ready to serve hot.

Beans usili is a very popular recipe. Learn how to make/prepare Tamilian Beans usili by following this easy recipe.



Ingredients:


• 5 French Beans (chopped)

• 1/2 cup Toor Dal

• 1 tbsp Chana Dal

• 1/2 tsp Urad Dal

• 1/2 tsp Mustard Seeds

• 3 to 4 Dried Red Chillies

• 1/4 tsp Asafetida (Hing)

• 1 pinch Turmeric Powder

• Oil

• Salt to taste


How to make Beans usili:

• Wash and soak the toor dal and Chana dal (you can put them together) for about 1 hour.

• Once soft, grind this (dals) with red chillies, turmeric, some salt, hing and little water.

• Pour oil into a pan and stir-fry the dal mixture.

• Once the dal mixture breaks into small pieces and is not sticky anymore, empty it into a cup and keep it aside.

• In the same pan, pour required oil, add mustard seeds. When it starts breaking, add urad dal, salt and beans.

• Once the beans is cooked add the fried dal mixture and let it cook for 3-4 minutes.


Suggestions:

serve it hot with rice or roti .

• 250 g Beans (chopped)

• 1 cup grated Coconut

• 3 Red Chilies

• 1 tsp Black Gram

• A pinch of Asafoetida

• Salt (to taste)

• ¼ tsp Turmeric Powder

• 1 tsp Oil

• Few Curry Leaves


How to make Beans Fry:

• Toss beans with salt and turmeric in a bowl.

• Transfer the beans into a pan filled with water and cook until tender. Drain the beans and keep aside.

• Heat oil in a pan and sauté red chilies, black gram, and asafoetida.

• Stir in beans and cook for around 2 minutes.

• Add coconut and curry leaves. Mix well.

• Serve hot.
