Chettinad Egg Curry

Chettinad Egg Curry is a very popular delicacy of Tamil Nadu. Learn how to make/prepare Chettinad Egg Curry by following this easy recipe.


Ingredients:



• 6 Eggs (hardboiled)


• 3 tsp Coriander Powder


• 1 1/2 tsp Chili Powder


• 1 tsp Fennel Seeds


• 1 tsp Cumin Seeds


• 1/2 tsp Turmeric


• 1/2 Ginger


• 2 tsp Garlic Paste


• 2 tbsp Oil


• 1/2 tsp Fenugreek Seeds


• 1/2 tsp Fennel Seeds


• 1 Cinnamon Stick


• 3 Onions (ground)


• 250 gm Tomatoes (peeled, seeded & ground)


• 250 ml Water


• 350 ml Coconut Milk


• 1 tbsp Lime Juice


• Coriander (chopped)
How to make Chettinad Egg Curry:


• Peel eggs and cut them into halves (lengthwise).


• Grind coriander powder, chili powder, 1 tsp fennel seeds, cumin, turmeric, ginger and garlic together with 2 tbsp water to make a paste.


• Heat oil in a shallow pan and fry fenugreek, fennel seeds and cinnamon for 10 minutes. Add in onions and fry till they are golden in color.


• Now add the spice paste and cook for 5 minutes. Pour a little water in the pan to avoid scorching. Stir in tomatoes and cook for another 3 minutes.


• Stir in coconut milk and heat for some time. Also, add limejuice at this stage.


• Season with coriander and add eggs to make it ready to serve!

Ingredients:


• 4 cups (500gs) All-purpose Flour

• 2 tsp Instant Coffee Powder

• 3 tsp Cinnamon

• 1/2 tsp Almond Extract

• 1 tsp Ginger

• 1 cup (125gs) Granulated Sugar

• 1/2 tsp Salt

• 1 cup (125gs) Dark Brown Sugar

• 1 tsp Baking Soda

• 3 large (extra) or jumbo Eggs

• 1 cup (125gs) Butter

• 300 g Blanched Almonds, slivered

How to make Almond Spice Cookies:

• In a bowl, sift together the flour, cinnamon, ginger, salt and baking soda and set aside.

• In a large bowl, cream the butter. Add the coffee, almond extract, granulated and brown sugars and beat well. Add the eggs one at a time until smooth after each addition.

• On low speed gradually add the sifted dry ingredients, scraping the bowl with a rubber spatula and beating only until the mixture is smooth. Gently mix in the almonds.

• Spread out two pieces of wax paper. Place large spoonfuls of the dough lengthwise on each piece of paper to form heavy strips about 10-11 inches long. Fold the long sides of the paper p against the dough and, pressing against the paper with your hands, shape each strip of dough into a smooth oblong 12 inches long, 3 inches wide, and about 1 inch thick. Wrap the dough in the wax paper.

• Slide a cookie sheet under both packages of dough and transfer them to the freezer or refrigerator for several hours or overnight. This slices best when dough is frozen solid.

• Preheat oven to 375 degrees. Unwrap one roll of dough at a time. Place dough on a cutting board. With a very sharp knife cut the dough into 1/4-inch slices and place them 1 to 1 1/2 inches apart on an ungreased cookie sheet.

• Bake the cookies for about 10-12 minutes at 375 degrees. The cookies are done when they are slightly colored and spring back when lightly pressed with a fingertip.

Ingredients:


• 1/3 cup grated Gur (jaggery)

• 1/2 cup thinly-sliced Badam (almond)

• 1/4 cup Til (sesame seeds)

• 1½ tsp Ghee

How to make Almond Til Chikki:

• Take a tawa and heat it.

• Put the sesame seeds and roast them till they turn brown. Keep them aside and allow them to cool.

• Now put the sliced almonds in the tawa and roast them. Keep them separately.

• Take a separate pan or kadhai and heat the ghee in it.

• Add jaggery to the melted ghee and keep stirring till it melts and caramelizes.

• Now remove the melted jaggery from the flame and immediately add the roasted almonds and sesame seeds.

• Keep stirring so that the almond and sesame seeds properly get mixed with the jaggery.

• Now take a thali(plate) and grease it with ½ teaspoon ghee.

• Put the already prepared jaggery and til mixture on the thali and spread it evenly.

• Allow the mixture to cool and then cut it into square shapes.

• Store the yummy Almond Til Chikkis in an airtight jar.

• Add corn flour, water, spices and yellow color to the remaining syrup.

• Stir and boil continuously till transparent and thick.

• 2 cups raw rice (cook to an extent that each grain is separate, spread to cool)

• 1 tbsp Chana Dal (split Bengal gram)


• 1 tbsp Urad Dal (split black gram)


• 1 tsp Mustard Seeds


• 1 tsp Cumin Seeds


• 4 Red Chili (medium dry)


• 4-5 Green Chillies (slit length wise)


• 1 1/2 tsps Ginger (finely chopped)


• 1/4 tsp asafetida (hing)


• 1 1/2 tbsp Sesame Seeds (roasted powder)


• 2 tbsp Peanuts (roasted)


• 3 tbsps Oil


• Salt to taste


How to make Andhra Pulihora:


• Sprinkle turmeric powder ,salt, a tbsp of oil and few fresh curry leaves to the cooked and cooled rice and keep aside.


• Heat the remaining oil in a cooking vessel.


• Add the mustard seeds and let them splutter.


• Add dry red chillies, cumin seeds, chana dal, urad dal and fry for a minute till light brown.


• Add the slit green chillies, ginger, asafetida and few curry leaves and fry for a few seconds.


• Add the tamarind extract and jaggery and cook till the raw smell of tamarind disappears.


• It will be a like a thick but flowing paste. Remove from heat.


• Add the cooked tamarind mix, salt and combine well such that it’s spread all over the rice.


• Sprinkle the roasted sesame seeds powder and roasted peanuts and combine well.

Suggestions:


Serve it hot.

• Fry the onion till it turns brown and then add capsicum into it.


• After sauteing the capsicum for about 4 minutes add chilli powder, salt and asafetida to it.


• Add this mixture to the cooked potatoes and slide it in the oven.


• Bake the mixture for about 50 minutes at 350F (177C).


• Hot Potato and Capsicum fry is ready to be served.

• Pour yogurt into the mixture and blend again.


• Now add some freshly squeezed lemon juice and salt to the paste.


• Sieve this mixture through a muslin cloth to get smooth paste.


• Serve chilled.

• 5 tbsp Parmesan Cheese, shredded & divided

• 1/8 tsp Pepper

• 1/4 cup reduced-fat Cheddar Cheese, shredded

• 1/4 tsp Salt
How to make Asparagus Frittata:

• Take a small saucepan, and pour some water in it and bring it to a boil. Then add asparagus

• Cover it and boil for almost 3 minutes. Then you can drain and immediately place asparagus in ice water

• You should again drain and pat it dry. Get a 10-inch. Ovenproof skillet, saute onion in oil until it gets tender. Now you can add parsley and asparagus; toss to coat.

• Take a small bowl and combine the egg substitute, salt, 3 tablespoons Parmesan cheese and pepper. Then, you can pour over asparagus mixture

• Cover it and cook over medium heat for almost 8-10 minutes or until eggs are nearly set.

• You can sprinkle it with remaining Parmesan. Put uncovered skillet in the broiler, 6 inch from the heat, for 2 minutes or until eggs are set. Sprinkle slowly with cheddar cheese. Cut into quarters. The dish is very tasty when served fresh.

• 225 g Castor Sugar


• 200 ml boiled Water

• Boil until sugar is completely dissolved.


• Add berries and glucose. Simmer for 5 minutes on low flame.


• Pour the prepared fruit mixture in a processor and blend it.


• Transfer the mixture into a sive and with the help of the back of the spoon, press the fruit pulp to get the juice.


• Add lemon juice and mix well.


• Keep the fruit juice in a container and place in the freezer.


• Remove and beat the mixture in the container 3-4 times.


• Put it back into the freezer.


• When frozen, cover and refrigerate it.


• Take out 10 minutes before serving.

• 200 gms (7.054oz) Ginger (chopped)


• 300 gms (10.5 oz) Garlic (chopped)


• Coriander Leaves


• 1 Onions (chopped)


• 200 gms All purpose Flour/ Maida


• 1 Egg


• 1 Bell pepper (chopped)


• 10 Green Chilies (chopped)


• Agin-O- Motto (a pinch)


• Chili Powder


• Salt


• Black Pepper


• 5 tbsp Vinegar
How to make Chili Gobi:


• Mix all purpose flour, garlic paste, ginger, salt, beaten egg, chili powder and make a fine paste.


• Add cauliflower to the prepared paste and leave it for about 45 minutes.


• Heat some oil in a deep fry pan.


• Fry the mixed cauliflower inside it till it gets dark red in color.


• Add onions, bell pepper (capsicum), ginger, vinegar, green chilies, agin-o-motto, salt and garlic on another pan and deep fry it


• Add fried cauliflower to it and roast it thoroughly.


• Take chili gobi out and sprinkle coriander leaves on it.


Suggestions:


Serve hot as a side dish

How to make Baked Eggs with Tomato:


• Preheat the olive oil in a skillet.


• Add tomatoes and cook for about 5 minutes.


• Add parsley, garlic, sugar, a pinch of salt and pepper.


• Blend the mixture and set it aside.


• Put butter in 4 ramekins and spoon tomato sauce evenly among them.


• Break an egg into each ramekin and cook for about 15 minutes.


• Garnish it with basil leaves and serve with toast fingers.

Ingredients:



• A few drops of Hazelnut Syrup


• 4 tsp Sugar


• 1/2 tsp Cinnamon Powder


• 100 g Dark Chocolate


• 4 tsp Instant Coffee Powder


• 41/2 cups Milk

How to make Chocolate Coffee:


• In a microwave oven, heat half a cup of milk for thirty seconds.


• Now melt chocolate for thirty seconds.


• Make a mixture of coffee powder, melted chocolate, warmed milk and sugar.


• Whisk well until it is frothy; add a drop of hazelnut syrup.


• Take a serving glass and add one tablespoon of coffee and hot milk; stir it well.


• In a half cup of cold milk, prepare foam and pour it into the glass.


• Toss cinnamon powder and serve it hot.

Almond Cookies is a very tasty and easy recipe. Learn how to prepare Almond Cookies by following this recipe.




Ingredients:


• 1 cup All-Purpose Flour

• 1 cup ground Almonds

• ¼ tsp Baking Powder

• Dash of Salt

• ½ cup Butter (softened)

• ¾ cup Sugar

• 1 large Egg White

• ½ tsp Almond Extract

• 1/3 cup Almonds (sliced)


How to make Almond Cookies:

• Combine flour with ground almonds, baking powder, and salt in a bowl. Set aside.

• Whisk together butter and sugar with electric mixer until creamy. Beat in egg white and almond extract.

• Gradually add flour mixture into the creamed mixture. Chill for 2 hours.

• Knead dough well adding sliced almonds. Divide and shape into 1-inch cookies.

• Arrange on a lightly greased baking sheet at 1-inch distance.

• Preheat oven to 350 degrees F. Bake the cookies at 350 degrees F for 12 minutes or until golden brown.

• Let cool and store in an airtight container.

Ingredients:


• 4 Carrot (chopped)

• 7-8 Beans (chopped)

• 1 Onion (sliced)

• 1/2 tsp Chili Powder

• 1/2 tsp Turmeric Powder

• 1/2 cup Coconut (grated)

• 1 tsp Coconut Oil

• 1 tsp Mustard Seeds

• 4 Curry Leaves

How to make Beans Carrot Poriyal:

• Mix together the chopped vegetables, onion, chili powder, turmeric powder and salt.

• Add some water and cook it well together, until the vegetables become soft.

• Heat a tsp of oil in a pan and toss mustard seeds.

• Add curry leaves and sauté for a while.

• Add the cooked vegetables to this and mix them with grated coconut.

• Cook the mixture until the poriyal is dry.

• Tasty Beans Carrot Poriyal is ready.

Creamy Prawn Curry

Creamy Prawn Curry is a very popular recipe. Learn how to make/prepare Creamy Prawn Curry by following this easy recipe.




Ingredients:

• 500 gms Prawns (cleaned and headless)
• 1 Inch piece Cinnamon
• 4 Cloves
• 4 Cardamoms
• 1 cup Onion paste
• 1 tsp Ginger paste
• 1 tsp Red Chilli powder
• 2 Bay leaves
• 1/2 tsp Turmeric powder
• 2 cups Coconut milk
• 2 tbsp Ghee or clarified butter
• Salt to taste


How to make Creamy Prawn Curry:
• Smear the prawns with salt and wash well. Then apply some turmeric powder and keep aside for 5 minutes.
• Heat half the ghee (clarified butter) in a pan and heat the prawns for a moment.
• Take out the prawns from the pan and keep aside.
• Now, add the cloves, cinnamon, bay leaves, and green cardamoms. Heat briefly.
• Mix the onion paste and stir
• Fry on low heat for about a minutes or till the paste is browned.
• Add the red chilli paste / powder and ginger paste. Fry briefly on medium heat till the oil evaporates.
• Add the prawns and coconut milk. And then add salt as required. Apply heat for about 2 minutes.
• Add the remaining ghee (clarified butter) and cover tight for a little while.
