• 1 Avocado, peeled, pitted and sliced
• 10 Strawberries, sliced
• 2 tbsp White sugar

• 1/2 Cup chopped pecans
• 2 Cups torn salad greens

How to make Avocado Salad:

• Put the salad greens in a bowl and top it with the sliced avocado and strawberries.
• Drizzle the dressing over it and then sprinkle with pecans.

• 1 kilo Pulav Rice (Basmati)
• 1 kilo Meat (mutton)
• 4 Onions
• 3 Garlic (full ones)

• 1 cup Curd
• 4 Green Chillies
• 1 Inch Cinnamon (piece)
• 4 Cloves
• 4 Cardamoms
• 3 tbsp Chili powder
• 1 bunch Coriander Leaves
• 1 bunch Mint Leaves (Pudina)
• 1 tsp Kesari Powder (Orange Kesari)
• 1/2 Cup Oil or Ghee
• 3 tbsp Lime Juice
• Salt to taste

How to make Chettinad Mutton Biryani:
• Grind garlic, onion, and ginger separately.
• Cut onions and tomatoes. Clean meat and cut into pieces. Soak rice.
• Heat oil in a heavy bottom vessel , add cinnamon, cardamom, cloves. Add onions, sauté till the onions turn brown in colour.
• Add garlic and a little coriander leaves, fry it.
• Add green chillies, mint leaves, curd, tomatoes, chilly powder, and ground ginger and fry well. Add the meat to it and fry well.
• Add 2 glasses of water and cook the meat.
• Add remaining coriander, mint leaves and lime juice, cover and cook.
• Cook the soaked Basmati rice for 10 minutes.
• Take a vessel, put one layer of meat, then one layer of cooked rice.
• Repeat till all the rice is layered with the meat gravy.
• Mix saffron in a little milk, and Kesari powder and pour on the rice evenly.
• Cover put on low fire and put burning charcoal on top.
Suggestions: serve it hot

Ingredients:
• 2 tbsp Corn Flour
• ½ l Low Fat Milk
• 3-4 sachets Sugar Substitute
• 1 ½ cups Fresh Black Jamun

• Mix corn flour in ½ cup cold milk and keep it aside.
• Bring the remaining milk to boil and then mix corn flour mixture into it.
• Stir continuously after adding the mixture and simmer over a low flame.
• Remove the pan from the stove and let it cool completely. Add sugar substitute and chopped black Jamun and pour the mixture into an airtight container.
• Freeze it for 5-6 hours and then liquidize in a blender till it is slushy and then pour it in the airtight container.
• Freeze till the ice-cream is set.

• Sprinkle the crumb mixture evenly over the mushrooms.

Ingredients:

• Add in the lemon juice, lemon zest and Calvados. Stir well.

• Pour the contents into shallow container and put it in the freezer for 2 hours.

• Remove and beat with an electric beater.

• Put it back for freezing. Repeat 2 to 3 times.

• Refreeze it until set and serve chilled.

• Add beetroot and potatoes.

• Stir in turmeric and salt. Bring to a boil.

• Remove from heat and stir in curry leaves.

• Serve hot with boiled rice.

How to make Cashew cookies:

• Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

• Combine the flour, baking powder, baking soda and salt; gradually stir into the creamed mixture. Fold in cashew pieces.

• Drop by rounded spoonfuls onto the prepared cookie sheets. Bake for 12 to 15 minutes in the preheated oven.

• Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

• To make the frosting, melt 1/2 cup butter in a saucepan over medium heat. Cook until butter turns a light brown color, be careful not to burn it.

• Remove from heat and stir in the cream. Gradually beat in the confectioners' sugar and 1 teaspoon vanilla until smooth. Spread onto cooled cookies.

• Cook on medium to high flame, crushing the tomatoes and stirring infrequently, for 20 minutes, or until the sauce thickens.

Cham-Cham is a very delicious Bengali sweet made of paneer. Learn how to prepare Cham-Cham by following this easy recipe.



Ingredients:

• 450 gms Paneer

• 4 cups Water

• 2 cups Sugar

• 2-3 tbsp Rose Water

• A few strands of Saffron

• 200gms Fresh Thickened/ Double Cream


How to make Cham-Cham:

• Put the paneer in a bowl and knead it. Knead till all the lumps are removed and the paneer/cheese is absolutely smooth.

• Prepare sugar syrup by adding sugar and water in a pressure cooker and bring the mixture to a boil (without covering the pressure cooker).

• While the sugar syrup boils, divide the paneer dough into small oblong shaped balls and roll between your palms till smooth.

• Gently dip the balls to the sugar syrup and cover the pressure cooker. After the first whistle, wait for 8-10 minutes and then turn off the flame.

• Release the steam from the pressure cooker and allow the Cham-Chams to cool completely before touching them.

• When cool, pour the rose water and saffron strands on the Cham-Chams and chill for a few hours.

• When chilled, remove the Cham-Chams from the syrup and arrange in a platter.

• Whisk the fresh cream till thick and fluffy. Fill into an icing bag and pipe a swirl out (with a thick nozzle) onto each Cham-Cham.

• Garnish with slivers of your favorite dried fruit and serve.

Ingredients:

• Spice mix:

• 2 tsp Coriander Seeds

• 1 tsp Cumin Seeds

• 2 Dried Hot Red Chiles

• 2 Whole Cloves

• 2 Green Cardamom Pods

• 1-inch Cinnamon Stick

Fish:
• 1 kg Fish (cut into 1-1/2-inch pieces)

• 3/4 tsp Ground Turmeric

• 1/2 tsp Salt

• 2 tbsp Canola Oil

Sauce:
• 3/4 cup Onion (finely chopped)

• 1 tsp Fresh Ginger (grated and peeled)

• 1 Garlic Clove (minced)

• 1 Bay Leaf

• 1/4 cup Water

• 1 tsp Salt

• 1/2 tsp Sugar

• 1 cup Plain Whole Milk Yogurt


How to make Bengali Fish Curry:

• Put all the ingredients of the spice mix in a grinder.

• Process until finely ground.

• Now rub turmeric powder and 1/2 teaspoon salt all over the fish pieces in a large bowl and toss well.

• Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat.

• Add half of the fish pieces in it and cook until fish is lightly browned.

• Remove the pieces from the pan.

• Repeat the same with remaining fish pieces.

• Now to prepare sauce, add finely chopped onions to the pan.

• Fry until tender. Add ginger, garlic, and bay leaf; fry for 2 minutes.

• Add ground spice mix; cook 2 minutes.

• Add in water, 1 teaspoon salt, and sugar. Stir properly.

• Remove pan from heat and gradually stir in yogurt.

• Cook over low heat for 5 minutes, stirring constantly.

• Return fish pieces and accumulated juices to the pan.

• Cook over low heat for 5 minutes more.

• Discard bay leaf and serve with hot rice.

Dahi Sabzi

Ingredients:

• 1 cup Curd (Yogurt)

• ¾ cup Cauliflower Florets

• ¾ cup chopped Beans

• ¾ cup chopped Carrot

• ¾ cup Peas

• ¾ cup chopped Capsicum

• ½ cup Mushroom

• 1 tsp Ginger Paste

• Oil for Seasoning

• 1 tsp Pepper

• 1 tsp Turmeric Powder

• 1 tbsp Refined Four (Maida)

• ½ tsp Black Onion Seeds (Kalonji)

• 1 tsp Cumin Seeds (Jeera)

• Salt to taste


How to make Dahi Sabzi:

• Add maida, turmeric powder and ginger paste and mix well to the curd and beat it well till there are no lumps of Maida.

• In a large wok, heat the oil and add the cumin and lack onion seeds. Add carrot, beans and cauliflower.

• Add salt and a cup of water and mix well. Close the lid and cook for 5 minutes. Now, add mushrooms and mix well.

• Now add coarsely grounded pepper and mix well. Now add the curd's mixture and mix well.

• When it starts boiling add peas and capsicum. Add salt. Close the lid and cook for 5 minutes.


Suggestions: Remove to a serving dish and serve with plain rice or roti.
