Ingredients:

• 1 kg Prawns

• 6 Onions (cut into rings)

• 1½ inch piece of Ginger (chopped)

• 5 Garlic Cloves (chopped)

• 5 small Tomatoes (chopped)

• 8 stems of Curry Leaves

• 4 tsp Kashmiri Chilly Powder

• 4 tsp Red Chilly Powder

• 4 Green Chilies (chopped)

• ½ tsp Turmeric Powder

• Salt (to taste)

• Coconut Oil (as required)


How to make Prawns With Tomato:

• Mix prawns, red chilly powder, turmeric powder, little water, and salt together in a large bowl. Marinate in the fridge for 30 minutes.

• Heat little oil in a pan and gently fry the prawns. Remove and keep aside.

• Heat 2 tbsp of oil in the same pan and fry ginger and garlic for a minute.

• Stir in green chilies, curry leaves, and onions. Fry until the onions turn brown.

• Add in kashmiri chilly powder, tomatoes, and fried prawns. Cover and cook for 10 minutes on low flame.

• Serve hot with fried rice.

• Cucumber (small piece)

• Potato (chopped)

• 1 Onion (Sliced)

• 3 Green Chillies (Split )

• 1 Tomato

• 2 Drumstick

• 8 Red Chillies

• 1 tsp Coriander Seeds

• 1 tsp Urud Dal

• 1 tsp Channa Dal

• fenugreek

• 1tsp Jeera

• ¼ tsp Pepper

• Tamarind

• 3 tbsp Coconut

• 1 tsp Khus khus

• Dal (cooked)

• Asafoetida (small piece)

• Salt (to taste)


How to make andhra sambar:

• Roast red chilies, coriander seeds, rice, urud dal, channa dal, jeera, and pepper on a pan with little oil and mix them up well.

• Grind coconut and khus khus separately.

• Take a pan and cook cucumber using a glass of water.

• Add green chillies, onion, and potato on the cooked cucumber.

• After 5 minutes, add tomato and drumsticks into the same pan.

• Once these ingredients are cooked thoroughly, add cooked dal, ground coconut and khus khus, little turmeric and asafoetida.

• Two minutes later, add powdered masala, tamarind and salt.

• Keep boiling the ingredients till the gravy thickens.

• Finally put fenugreek and curry leaves for seasoning it.


Suggestions: Serve with hot rice or Idly.

• Add cream, salt, vanilla and half cup milk. Mix well and cool.

• Pour the contents into an ice-cream maker and freeze for at least 3 hours.

• 2 Green Bell Peppers (Capsicum)

• Clean and wash the mushrooms. Once dried cut the mushrooms into half inch cubes.

• Cut the Bell peppers into cubes.

• Heat the oil in a pan. Add mustard seeds and once they pop out , add cumin seeds, onions, ginger garlic paste, cloves, cinnamon stick & stir them until the onions turn brown in color.

• Add the chopped tomatoes, turmeric powder & boil until tomatoes becomes soft.

• Add the bell peppers and yogurt stirring them thoroughly.

• Add dhaniya powder, garam masala powder and mix it well.

• Add mushrooms. Add some salt and chilly powder as you desire.

• Cook until mushrooms becomes soft.


Suggestions: Goes great with chapati and rice.

Ingredients:

• 2 cups Mushrooms, chopped

• Tamarind (marble-sized piece), soaked in ½ cup water

• 1 tsp Whole Black Pepper

How to make Chettinad Mushroom Masala:

• Crush the soaked tamarind well and then strain the water. Keep the water for later use.

• Dry roast chana dal and whole black pepper on a tawa.

• Grind the roasted ingredients and add garam masala, while blending them.

• Heat oil in a pan and add mustard seeds.

• When they start crackling, add the curry leaves and red chilies and fry for about 10 seconds.

• Add the chopped mushrooms and stir well, until they get coated with oil.

• Add salt and cook with the lid on, until the mushrooms start sweating and become soft.

• Mix in the tamarind mixture and cook on open fire, till the gravy gets thick and starts sticking to the mushrooms.

• Add the ground spices and salt and fry for another 3 to 4 minutes.

• Remove from fire and serve hot with rice or rotis.


Tips - A tblsp of grated coconut can also be added along with the spice mixture for added flavour.

• Take a pan and heat oil.

• Put the mustard and cumin seeds, and fry it until they start popping. T

• Take a pan, heat oil in it and then fry tomatoes (leaving one) in it for 3 minutes. Grind the tomatoes and keep it aside.
• Now, heat the pan with oil and put cumin seeds, fenugreek seeds, coconut, red chili and coriander seeds in it and fry.
• Now, add ½ chopped onion, garlic and cashew nuts and fry it again.
• Grind these fried ingredients with water to make paste.
• Heat the pan again and put remaining onion and tomato in it and fry it till onion is golden in color.
• Add grinded onion- cashew nut paste in it and fry for 5 minutes.
• Now, put ground tomato in it and cook till the oil starts to separate.
• Put tamarind juice and salt in it and cook it on medium heat for around 4 minutes. Garnish with chopped coriander leaves and serve with lunch.

Ingredients:

• 1 1/2 Cups soya chunks

• 2 Cups basmati rice

• 1 Onion, chopped

• 2 Green chilies, finely chopped

• 1/2 tsp Chili powder

• 1 tsp Coriander powder

• 1/2 tsp Turmeric powder

• 1 tsp Garam masala

• Salt to taste

• 2-3 tbsp Ghee or oil

• 1/2 tsp Cumin seeds

• Chopped cilantro and mint, for garnish


How to make Soya Biryani:

• Soak Soya chunks in 3 cups of hot water for 30 minutes.

• Wash and soak basmati rice in water for 30 minutes.

• Heat ghee in a pressure cooker.

• Add cumin seeds and ginger garlic paste. Sauté well.

• Then add the onions, green chilies and sauté till onions are soft.

• Add chopped tomatoes and stir till tomatoes are soft.

• Now, add turmeric, chili, coriander and garam masala powders.

• Stir well, till the masala is well sautéed (4-5 minutes).

• Drain the soya chunks and rice and add to the masala.

• Stir and sauté, adding more ghee if required.

• Add 4 cups of water and salt. Stir well.

• Cover the pressure cooker and cook till done.

• Garnish chopped cilantro and mint.

• Serve hot with pickle and raita.

• Soya Biryani is ready.

Vegetable Biryani

Ingredients:

• 1-1/2 cups Uncooked Rice

• 2 pinches Saffron (dissolved in a little water)

• 2 Onions (sliced)

• 2 tbsp Cashew nuts (broken into pieces)

• 2 tbsp Raisins

• 3 Tomatoes (finely chopped)

• 2 Capsicums (sliced)

• 2 cups (mixed boiled vegetables i.e. chopped cauliflower, carrots, potatoes, green peas)

• 1 tbsp Coriander Leaves (chopped)

• A little Milk

• 4 tbsp Ghee

• Salt to taste

To be ground into a paste:

• 6 Garlic Cloves

• 25 mm piece of Ginger

• 3 Cardamoms

• 4 Green Chilies

• 3 Cloves

• 1 tbsp Poppy Seeds

• 2 sticks Cinnamon

• 1/2 tsp Turmeric Powder

• 1/2 tsp Chilly Powder

• 2 Onions

• 6 Mint leaves


How to make Vegetable Biryani:

• Boil the rice in a vessel containing adequate water, cook and drain excess water.

• Add the saffron liquid and salt to the cooked rice. Mix well.

• Heat the ghee and add the onions.Fry until brown.

• Remove the onions and in the same ghee, add the cashewnuts and raisins.

• Fry for a few seconds. Remove and keep aside for garnishing.

• Add the prepared paste and fry for 3 to 4 minutes.

• Add the tomatoes and capsicum and fry again for 2 to 3 minutes.

• Add the boiled vegetables and coriander and cook for a while.

• Put 2 tablespoons of ghee at the bottom of a baking bowl.

• Make layers of the rice and vegetables, beginning and ending with rice.

• Sprinkle a little milk on top.

• Cover and bake in a hot oven at 200 degree C for 15 to 20 minutes.

• Garnish with fried onions, cashew nuts and raisins and serve hot.

• In a wok (kadhai) heat sufficient oil and fry the fish fingers in batches till golden and crisp. Drain and put on a paper towel.

• Sprinkle chaat masala and serve hot with lemon wedges.

• Take a bowl and mix corn flour, rice flour, tomato sauce, ginger-garlic paste, a little salt and the parboiled babycorns.

• Pour oil in a pan and heat it.

• Now fry the babycorns.

• Remove them from the pan and drain out excess oil on clean paper towels.

• Pour 3 tbsp oil in a pan and heat it.

• Add onions, green chillies and garlic, saute until golden brown.

• Add the deep-fried baby corns, soya sauce, tomato sauce, chilli-garlic sauce and salt to it.

Ingredients:
• 10 Baby Corns
• 2 tbsp Gram Flour/Besan•2 tbsp Rice Flour

How to make Baby Corn Finger Chips :
• Cut Baby Corn vertically into two long pieces.
• In a bowl mix Gram, Rice, Corn Flour, Chili Powder, Soda and Salt with water to a batter.
• Dip Baby Corn fingers into the batter and marinate baby corns in the above mixture for 30 minutes.
• Deep fry on medium heat till they turn reddish brown.
• Remove them on a kitchen towel and serve hot with Tomato Ketchup or Chili Sauce.

Ingredients:

• 3 sticks Baby Corn, sliced

• 1 Capsicum, chopped

• 1 Onion, chopped

• 1 Tomato, chopped

• 1 tsp Ginger-Garlic Paste

• 1 tsp Chili Powder

• ½ tsp Turmeric Powder

• 1 tsp Garam Masala Powder

• ½ tbsp Coriander Powder

• 3 spoon Grated Coconut

• 1 tsp Mustard Seeds

• 1 Urad Dal

• 4 Curry Leaves

• Salt, to taste

• Oil, as required


How to make Baby Corn Capsicum Curry:

• Pressure cook the baby corn pieces, after adding turmeric powder and little salt, for about 10 minutes or till it turns tender.

• When boiled, drain water out of it and keep it aside.

• Heat oil in a pan and put mustard seeds and urad dal in it.

• When the seeds start to crackle, add curry leaves, onion and capsicum in it and fry till onion becomes golden brown in color.

• Add tomatoes to it and fry till they become soft.

• Now, put ginger-garlic paste, chili powder, garam masala powder, coriander powder and salt in it and mix well again.

• Add cooked baby corn and fry again, for 2 minutes.

• Add water to this mixture and cook for about 5 minutes.

• In the meantime, prepare coconut milk by grinding grated coconut with water.

• Add the milk to baby corn gravy. Cook it for 5 more minutes and serve hot with chapattis.

Aloo Paratha

Ingredients:

• 2 cup Wheat Flour

1 cup Water

• 2-3 Potatoes(boiled and mashed)

• 1/4 tsp Red Chilli Powder

• 1 tsp Chaat Masala

• 1/4 tsp Salt

• Oil/ghee


How to make Aloo Paratha:

• Mix water and flour and knead it to make a soft dough.

• Leave the dough for about half an hour.

• Meanwhile add salt, chili powder, chaat masala to the potatoes and mix thoroughly.

• Now roll out small balls out of the dough.

• Smear a little oil in the center and then put some stuffing mixture.

• Draw the edges towards the center to cover the mixture.

• Press the resulting dough gently and dust it with flour. Flatten to the size of roti.

• Place the paratha on a preheated griddle.

• After some time reverse the side of paratha. Do it when golden brown patches appear on first side.

• Sprinkle little oil and then flip again.

• Sprinkle oil drops on other side also. Cook till it is well done.

• Hot Paratha is ready.

Ingredients:

• 1 slice Stale Bread

• ½ cup Milk

• 1 tbsp Tomato Ketchup

• 1 tbsp Worcestershire Sauce

• 250 g fine Mutton Mince

• 1 tsp Ginger-Garlic Paste

• 1 tsp browned Onions (crushed)

• 1 tbsp Coriander Leaves (chopped)

• 1 Green Chilly (chopped)

• ¼ tsp Turmeric Powder

• ¼ tsp Garam Masala Powder

• Salt (to taste)

• 3 tbsp Oil


How to make Mutton Cutlets:

• Combine all the ingredients, except oil, in a bowl and mix well, using 1 tbsp oil. Keep aside for 15 minutes.

• Shape the mixture into 6 round thick cutlets and smear oil on both sides of each cutlet.

• Transfer in a baking pan and cover with cling wrap.

• Set the oven to 350 degrees F and bake for 6 minutes.

• Serve hot with potato chips and tomato sauce.

Ingredients:

• 1 tsp Kitchen King Masala

• 2 Green Chilli Powder

• 1 cup White Chickpea (soaked in water for 8 hours)

• 1 Potato (skin peeled)

• 2 Bread (slices)

• Few sprigs of Coriander Leaves (chopped)

• 1/4 tsp Turmeric Powder

• 1 tsp Salt

• 1 tsp Coriander Powder

• 3/4 tsp Garam Masala Powder


How to make Chickpea Cutlet:

• Cook chickpea in a pressure cooker, until they turn soft; set is aside; allow it to cool.

• Now drain the remaining water and add salt, coriander, spice powders.

• Blend the bread slices (coarsely); toss it over chickpea mixture.

• Mash the mixture well.

• Make small balls; spread it over both sides with bread crumbs.

• Heat a non stick pan and spread oil on it.

• Keep cutlets on the pan and sprinkle few drops of oil in the corners.

• Toast both the sides of the cutlet till they turn brown.

• Enjoy it hot.


Suggestions: Serve with ketchup.

Tip: I found the cutlets to be far, far more delicious when baked in olive oil. If you are short on time, you can definitely pan fry them but I don’t recommend it. They have a better texture when baked, too. These taste great with mustard.

Ingredients:

• 1/2 kg Fish

• 1 Egg

• 1 Bread slice

• 1 tsp Garlic paste

• 1 tsp Ginger paste

• 1 Cup Bread Crumbs

• 1-2 Green Chillies

• 1 tbsp Corn Flour

• 1/2 tsp Garam Masala

• 1/2 tsp Turmeric Powder

• 1 Bunch of Coriander Leaves

• Salt to taste

• Oil for frying


How to make Fish Cutlet:

• Smear and rub fish with turmeric powder and salt. Wash it after 5 minutes.

• Keep the fish over a pan of hot water for steaming. Remove the bones and gently mash it using hands. Soak the bread slices in water and squeeze.

• Add red chilli powder, garam masala powder, ginger-garlic paste, corn flour, coriander leaves, green chillies, bread slice and salt.

• Mix all the above ingredients and make walnut sized balls

and flatten the ball slightly.

• Take the beaten egg. Dip the cutlet pieces in egg and roll in breadcrumbs.

• Heat the oil slightly in a wok. Fry till the pieces turn brown.

• Fish cutlet is ready.


Suggestion: Serve it with potato fingers and chutney.

• Shape the mixture into ovals forming cutlets.

• Smear a pan with oil. Dip each cutlet into egg white and roll into bread crumbs.

• Fry the culets on both sides until golden brown.

Ingredients:

• ½ kg Sweet Potatoes (boiled, mashed)

• 100 g dry Prawns (powdered)

• 2 large Onions (chopped)

• A pinch of Turmeric Powder

• 1 tsp Coriander Powder (Dhaina)

• 1 tsp Chilly Powder

• ¾ tsp Garam Masala Powder

• Salt (to taste)

• Few Coriander Leaves (chopped)

• Few Curry Leaves

• Bread Crumbs (to coat)

• 2 Eggs Whites (beaten)

• 6 tbsp Oil (more for frying the cutlets)


How to make Potato Cutlets:

• Heat oil in a saucepan and stir fry ginger-garlic paste.

• Add onions and green chilies. Saute nicely.

• Stir in dry prawn powder, turmeric powder, coriander powder, chilly powder, garam masala powder, and salt. Stir fry until the mixture dries up.

• Stir in curry leaves and coriander leaves. Cook well.

• Add mashed potatoes and blend well.

• Remove from heat and shape the mixture into small balls. Press slightly to form cutlets.

• Dip the cutlets into egg whites and roll into bread crumbs.

• Heat oil in a pan and pan-fry the cutlets until golden brown.

• Serve hot with tomato sauce.

Ingredients:

• 3 tsp Cocoa Powder

• 3/4 cup All Purpose Flour/Maida

• 6 tsp Ghee

• 3-1/2 cups Condensed Milk

• 3/4 cup Water

How to make Chocolate Burfi:

• Heat a heavy bottomed skillet and add ghee in it.

• Now fry maida in ghee.

• Make a sugar syrup by dissolving sugar in water taken in a pot.

• Meanwhile dissolve the cocoa powder in condensed milk heated on low flame in a pan and keep it aside.

• Mix all ingredients together except cashew nuts and cocoa powder and stir continuously.

• When the mixture becomes thick, add cashew nuts and mix properly.

• When froth appears in the mixture, pour 3/4 portion of it into a greased plate.

• Now mix the dissolved cocoa powder with the rest of mixture .

• Spread this as a top layer on the mixture spread on the greased plate.

• Allow it to cool and cut into squares.

• Chocolate burfi is ready.

Ingredients:

• 1 kg (35 oz.) Mutton

• 1 tsp Garam Masala Powder

• 2 cups thick Yogurt

• 2 Cinnamon Stick

• 10 Cloves

• 5 – 6 Green Cardamoms

• 2 Bay Leaf

• 2 tbsp Poppy Seeds (soaked in a little warm water for 10 mins)

• Few strands Saffron

• 2 tbsp Cream

• 4 tbsp Oil

• 2 tbsp Ghee

• 4 Onion (finely chopped)

• 2 Tomato(medium) (chopped)

• 3 tbsp Ginger-Garlic Paste

• 5 Green Chilies (slit)

• 3 - 4 tbsp Grated Coconut

• ½ tsp Turmeric Powder

• 2 tsp Chili Powder

• 3 tsp Coriander Powder

• 1 tsp Cumin Powder

• Salt to taste

For garnishing:-

• Coriander leaves

• 10 Almonds (blanched and sliced)


How to make Mutton Curry Hyderabadi:

• Marinate the mutton with cumin powder, ginger-garlic paste, curd, red chili powder, coriander powder and green chilies for an hour.

• Make a paste by grinding poppy seeds and grated coconut.

• Take a vessel and heat both oil and ghee.

• Put whole spices, bay leaf and fry for a few seconds.

• Add onions and fry till it turns transparent.

• Add tomatoes and the marinated mutton and mix well.

• Cook on a medium flame till the water is completely evaporated.

• Put the poppy seeds-coconut paste, salt and mix well.

• Add 3 cups of water and cook till the mutton is tender and the gravy thickens.

• At the end add garam masala powder, saffron solution and mix well.

• Garnish with chopped coriander leaves, sliced almonds and fresh cream.


Suggestions: Serve with any Indian bread, Biriyani, Pulao or just plain steamed rice.
