Mushroom Biryani

Ingredients:

• 900 gms Mushroom

• 2 Onions (thinly sliced)

• 4 cup Basmati Rice

• 1 Lemon

• 3/4 cups Oil/ghee

• 2 tsp Soya Sauce

• 7 Cloves garlic

• 4 Green chillies(chopped)

• 3 tsp Ginger (chopped)

• 3 Cinnamon

• 3 Cardamoms

• 3 Cloves

• 3 Tomatoes (chopped)

• 1-1/2 tsp Chilly Powder

• 3 tsp Coriander Powder

• Mint leaves

• Salt to taste


How to make Mushroom Biryani:

• Clean, wash and soak the rice for 1 hour in enough water taken in a pot.

• After due time, drain the water from pot.

• Heat ghee in a pressure pan and saute soaked cleaned rice. Remove.

• Trim mushrooms into big pieces and keep it aside.

• Grind cardamom, cloves, ginger, cinnamon, garlic into a paste.

• In a pressure Cooker, heat the oil and ghee, fry ground masala and the onion till it turns golden brown.

• Then add all other ingredients, mushrooms and stir for 10 minutes.

• Add 7 cups water and let it boil, add the soaked rice and stir till the rice level and the water level equals, pressure cook in low flame for 15 minutes.

Ingredients:

• ½ cup Tur Dal (soaked)

• Mixed Vegetables (as desired, chopped)

• 2 tbsp Oil • Salt (to taste)

• 1 tsp Mustard Seeds

• 1 sprig Curry Leaves

For Sambar Masala:

• 1 tbsp Chana Dal

• 1 tbsp Urad Dal

• 1 tsp Cumin Seeds

• ½ tsp Fenugreek Seeds

• 1 tbsp Coconut (grated)

• 8 Red Chilies


How to make Masala Sambar:

• Heat oil in a pan and fry all the ingredients to make the sambar masala.

• Remove and grind to a fine paste.

• Take tur dal with water in a large saucepan and cook until tender.

• Mix in vegetables and cook until tender.

• Stir in the ground sambar masala and simmer for another 10-15 minutes.

• Flavor with mustard seeds, curry leaves, and salt.

• Serve hot with dosa.

• 450 gm Boneless Chicken Breast

• 1 Pizza frozen dough

• 1 tbsp Olive oil

• 1 Garlic Clove (minced)

• 2 cups Purple Onions (sliced)

How to make Chicken Pizza:

• Heat oil in a skillet over medium-high heat.

• Add chicken, salt, pepper and garlic and heat it for few minutes.

• Add onions, bell pepper, mushrooms and thyme.

• Saute for few minutes into the chicken mixture, until chicken is cooked. Keep it aside.

• Unroll pizza dough and pat into a 12-inch pizza pan coated with cooking vegetable spray.

• Splash half cup cheese evenly over the dough.

• Spread chicken mixture over the cheese and top with remaining 1/2 cup of cheese.

• Bake at 425 degree F for 15 minutes or until crust is golden.

• 6 tbsp Butter (softened)

• ½ cup Sugar

• 1 Egg

For the Filling:

• 1 (8 oz) package Cream Cheese (softened)

• ½ cup Confectioners' Sugar

• 2 cups sliced fresh Strawberries

• 1 cup Sugar

• ¼ cup Cornstarch

• 2 cups crushed fresh Strawberries


How to make Strawberry Pizza:

• Whisk butter and sugar for about 2 minutes, until creamy.

• Beat egg, vanilla extract, and almon extract together in a seprate bowl. Add to the sugar-butter mix and beat well.

• Sift flour, baking powder, and salt together.

• Gradually add to the creamed mixture. Whisk well. Cover and refrigerate for 1 hour.

• Remove from the fridge and roll out into a 13-inch circle on a floured surface.

• Place in a 12-inch pizza pan. Fold the edges slightly up.

• Bake at 350 degrees F for 18-22 minutes, until lightly browned. Remove and cool completely.

• Prepare the filling by beating confectioner’s sugar and cream cheese together, until smooth.

• Spread over the crust and arrange sliced strawberries.

• Combine sugar, cornstarch, and crushed berries in a saucepan. Stir and cook until well blended. Bring to a boil and continue cooking until thickened.

• Remove and cool. Spread over the strawberries.

• Refrigerate for 30 minutes. Slice and serve.

• 30 gms Peanuts

• 2 Bay Leaves

• 3 Cloves

• Oil

How to make Gujarati Dal:

• Wash dal and peanuts in 750 ml of water.

• Once dal is cooked, mix it till it become smooth.

• Heat up the pan with oil and add mustard seeds, cumin seeds, curry leaves , cloves, bay leaves , fenugreek, asafoetida and red chilies.

• Add tomato, cocum, chili powder, green chilies, turmeric powder, jaggery and fry it for 3 min.

• Add 750 ml water, salt , dal and lime juice.

• Cook it for 15 min in low flame and garnish with coriander leaves.

• Serve it.

• 1 cup Split Green Gram Skinless (Dhuli Moong Dal)

• 1 cup Milk

• 3/4 tsp Turmeric Powder

• Pressure cook the dal with salt, turmeric powder and water and bring it to boil. Simmer in low heat till the dal is nearly done.

• Add crushed ginger, hot milk and jaggery and stir to mix well and cook for another 10 minutes. Check the seasoning.

• In a pan, heat ghee and add cumin seeds, asafoetida and cloves.

• When it splutters, add the dal and stir.

• Serve hot.

Ingredients:

• 1 kg Rice

• 1 kg Mutton

• 10 gm Cardamom

• 10 gm Cinnamon

• 10 gm Cumin Seeds

• 20 gm Garlic

• 100 gm Green Chilies

• 50 gm fried Onion

• 1 bunch Coriander Leaves

• 1 bunch Pudina Leaves

• 1/4 cup Yogurt

• 1/4 kg Ghee


How to make Hyderabadi Mutton Biryani:

• Wash mutton and keep it aside in a vessel.

• Grind green chilies, ginger, garlic, cinnamon, cumin seeds, cloves, fried onion, coriander leaves, and pudina leaves together. Add this mixture to the meat.

• Add yogurt and mix the ingredients thoroughly. Leave aside for half an hour.

• Heat the oil which you had used to fry onions in a cooker.

• Add the marinated mutton and cook for 4-5 whistles. Henceforth, lower the flame and cook for 5 minutes.

• Boil 2 liters of water in a vessel and add rice.

• Take out semi-cooked rice from the vessel and spread it on the meat and spices mixture, to form a layer.

• Combine one cup of boiled water with 1/4 kg ghee. Pour over the rice.

• Place a plate on the vessel and seal its edges with kneaded dough.

• Cook for 15 minutes on medium heat.

• Turn off the heat and leave the biryani for 15 minutes, after which it will be ready to be served.

• Pressure cook mutton pieces with 2 cups water, turmeric and salt till 6 whistles.

• Add poppy seeds, coriander seeds, cumin seeds, cloves, cinnamon, green cardamoms, black peppercorns, fennel seeds. Cool it for 10 min.

• Then grind it and keep it aside.

• Heat up the oil in Pan.

• Add curry leaves, onion and Cook till the onion becomes brown.

• Add ginger garlic paste, chili powder and half the black pepper powder and cook for 2 min.

• Now add tomato and mutton pieces, cook on high flame until the tomatoes become soft.

• Add salt and spice powder.

• Cook in low flame till mutton pieces become soft and add remaining black pepper and mix well. • Finally toss coriander leaves and serve.

Ingredients:

• 250 g Bengal Gram Flour (Senaga Pindi)

• 250 g Sugar

• 1 tsp Cardamom Powder

• Oil, to fry

• 1 cup Water

• 50 g Cashew Nuts, fried in a tbsp ghee

• 1 tsp Ghee


How to make Bandaru Ladoo:

• Take a small pan and heat oil in it and add it to the Senaga Pindi.

• Mix it well with hand and prepare a dough using water (it should have the same consistency as puri dough).

• Place the disc with medium-size hole in the muruku press and fill it with dough, leaving space for the upper part of press.

• Heat the oil and carefully press the dough in the oil, to make spirals, making sure that the bottom of the press is away from the oil (about 2 inches). Do it carefully, so that the hot oil fumes do not reach your hand.

• Turn it over and fry it till it turns golden brown.

• Drain the oil and repeat the process till the dough is over.

• Powder the prepared spirals in a blender and keep aside

• Now, take sugar and mix water in it, to make light syrup.

• Add powdered spirals, cardamom powder and fried cashew nuts in the sugar syrup and mix well.

• Remove from the flame and prepare lemon sized balls from the mixture, while applying a little ghee on the palm, so that it does not stick.

• Bandaru ladoos are ready to serve.


Tip of the day: There is simple and easy way of doing it (provided there is no connoisseur in the family) for those who do not have the muruku press or time and patience. Powder sugar in a blender, fry `senaga pindi' lightly in 2 tbs of ghee and mix them along with the roasted cashew nuts and cardamom powder. Add a little more ghee for consistency while making the laddus.

• Drain the water, peel off the skin of almonds and make a fine paste in a grinder using milk if necessary.

• Cook badam paste for about 5 to10 minutes in a heated pan over low flame and stir it continuously.

• Add sugar and keep stirring the mixture.

• Pour the remaining milk and boil it for about 15 minutes.

• Garnish it with a few saffron strands and serve.


Suggestion: This can be served hot or cold.....it tastes good either way!

• 8 cups Coconut (grated)

• A handful of Cumin Seeds

How to make Avalos Podi:

• Mix together flour, coconut, half handful cumin seeds, and salt in a large mixing bowl. Let it rest for 1 hour.

• Dry roast the remaining cumin seeds in a pan.

• Pour the flour mixture in the pan and cook for about 20-25 minutes on medium flame, until brown. Stir frequently.

• Remove and cool completely.


Suggestion: While serving, take some avalose podi and mix in sugar and eat. Optionally, you can slice some banana pieces and mash it along and serve.


Tip of the day: Roasting should be done on medium heat so as to bring out the flavors and for even roasting.

• Put all the fried ingredients into the boiled beetroot and cook it with four to five cups of water.

• Add sambar powder, tamarind pulp

• Mix it well.

• Reduce the heat and simmer up to 5 min.

• Garnish with coriander leaves.

How to make Baby Corn Mushroom Masala:

• Heat oil in a pan and fry onions, until they are golden brown.

• Add in ginger-garlic paste and allow it to simmer for 2 minutes.

• Stir in green chilies and red chili powder.

• Add in tomatoes and simmer for 5 minutes.

• Add salt, garam masala and turmeric powder

• Then, add mushrooms, babycorn and capsicum.

• Stir for five minutes, or till tender.

• Garnish with coriander leaves and serve hot.

Tip fo the day: Add a few tsps. of milk to cauliflower while boiling to rid it of the raw smell. Drain and wash before adding to the recipe.

Sometimes the classics are the best and this traditional bacon and cheese omelette is no exception to that rule. Learn how to make/prepare Bacon and Cheese Omelette by following this easy recipe. Ingredients:
• 1/4 cup Fresh Parsley (Chopped)
• 115 gm Swiss cheese (thinly sliced)
• Salt and pepper as per taste
• 8 Eggs (beaten to blend)
• 7 slices Bacon
• 1 tbsp Olive Oil
• 1 cup Milk

How to make Bacon and Cheese Omelette:
• Preheat oven to 350-degrees F.
• Grease a 9-inch round baking dish with butter.
• Arrange cheese slices on the bottom of the greased dish.
• Take oil in a large skillet, add bacon and cook over low heat until done.
• Drain well on paper towels.
• Chop 4 slices of the bacon and then half the remaining 3 slices crosswise, curling them into a spiral. Set aside.
• Whisk eggs and milk together in a bowl.
• Add salt and pepper and then stir in the chopped bacon.
• Pour milk/egg/bacon mixture over the cheese.
• Bake for 25-30 minutes.
• Place parsley in center of omelet and arrange bacon curls around the edge.
• Bake for 5 more minutes and then cool 5 minutes before slicing into wedges to serve.

Paala Undrallu

Hai viewers...Happy Vinayaka chavithi to all. In this Happy Occasion I present Paala Undrallu here. It is also known as Paal kozhukattai in tamil, it is a perfect dish for Vinayaka.




Ingredients :
• Milk : 1 cup

• Rice Flour : 1/2 cup
• Finely Grated Coconut : 1/2 cup
• Sugar : 1/2 cup
• Cardamom Powder : 1/2 tsp
• Ghee : 1 tsp

How to make Paala Undrallu :
• Bring two cups of water to a boil.

• Add the rice flour and ghee and mix well.
• Reduce the flame, cover and cook for 2 minutes.
• Switch off the flame and set aside for 5 minutes.
• Divide the dough into small balls and set aside.
• In a cooking vessel, bring a cup of milk to boil.
• Add the sugar and grated coconut and cook for 2 minutes.
• Then add the dough balls and cook for another 5 minutes.
• Now add the cardamom powder and mix well. Switch off the flame and serve.
