Chicken Haleem

Happy Ramzan to all viewers.....
Usually Haleem is slowly cooked for six to seven hours which results in a paste like consistency with the taste of spices and meat blending with wheat but Chicken Haleem recipe is very easy to make and prepare, it takes only 2hours.



Ingredients:

•1 kg chicken boneless 2 cup wheat (whole, crushed and soaked in water for 1 hour)

•3 medium size onions 1/2 cup yellow lentils (soaked and boiled)

•1 tsp ginger paste

•1 tsp garlic paste

•2 tbsp red chili powder

•2 tbsp coriander powder

•1 tsp turmeric powder

•salt to taste

•1 tsp gram masala powder

•1/2 tsp black pepper powder

•2 inch cardamon stick

•2 bay leaves

•1/2 cumin powder

•1 cup cooking oil

•1/2 cup fresh chopped coriander

•1/2 cup fresh chopped mint leaves

•6 small chopped green chilies

•2 tbsp finely sliced ginger

•2 lemon


How to make Chicken Haleem:

•Heat oil in a pan, fry onions till golden brown. Remove with slotted spoon and spread on kitchen peeper to drain oil. When it is cool and crisp, crumble with hands and keep set aside.
•In a large pot add 6 cups of water and wheat boil gently for about 30 minutes or more until very tender and soft. Remove from heat and keep set aside.
•Grind boil yellow lentils and keep set aside.
•Heat oil in a large pot add ginger paste, garlic paste, red chili powder, coriander powder, salt, turmeric powder, bay leaves, cumin powder, cardamon stick, gram masalaa, black pepper powder and 1/2 cup of water and saute 2 minutes, Now add chicken bone less pieces and grind yellow lentils.
•Now add the cooked wheat and mix well, add oil . Do check the salt and add more if needed.
•Let it simmer for at least 25-30 minutes and keep stirring between. Cook until mixture becomes thick.
•Remove from heat and garnish by fresh chopped coriander, fresh chopped mint leaves, chopped green chilies, sliced ginger, and fried onions.
•Delicious Chicken haleem is ready to eat, serve pipping hot with lemon and be creative with garnishing.


Tip of the day: While using ginger and garlic paste in curries, always use garlic at 60% ratio and ginger at 40% as ginger is very strong and may make your dish sharp and pungent.

Coconut Crab Curry

Coconut Crab Curry goes well with steamed rice, roti or some nice crusty bread. Learn how to make/prepare Crab Coconut Curry by following this easy recipe. 
 

Ingredients:

• 6-8 Live blue crabs or 2 Dungeness crabs or Mud crabs, about 1-1/2 lb each

• 1 Can coconut milk

• 1 Lime, juiced

• 3-1/2 tbsp Malaysian fish curry powder

• 1-1/2 tbsp Chili powder

• 2 tsp Turmeric powder

• 8-10 Curry leaves

• 2 Red onions, sliced

• 4-6 Cloves garlic

• 1 Inch fresh ginger, sliced

• 4 tbsp Vegetable oil

• 3 Cups water

• Salt to taste


How to make Coconut Crab Curry:

• Wash the Blue crabs and cut it into halves and Dungeness or Mud crabs can be cut into 4.

• Crack the shells and claws gently with a mallet.

• Grind onions, garlic and ginger to make a fine paste.

• Add vegetable oil to a hot pot and stir-fry paste for 2-3 minutes.

• Take a small bowl, combine chili powder, fish curry powder and turmeric powder, few tbsp water and mix into a thick paste.

• Add this paste to the pot, stir-fry till quite toasted and oil starts to ooze from paste.

• Now add coconut milk, curry leaves, water, and season with salt.

• When the mixture starts to boil, decrease the heat to a simmer, stirring occasionally till the sauce thickens slightly for about 15-18 minutes.

• Add lime juice and crabs, stir to coat with sauce.

• Cover and simmer till crabs turn red.

• Take out crabs from the pot and keep warm, let stand for about 15 minutes.


Tip of the day: When very finely chopped greens or chillies etc. are required in a recipe, use a pair of sharp Scissors instead of a knife. The job will be made faster, more efficient and safe to cut.

కావలిసినవి:
క్యారెట్-మూడు
పాలు-అరలీటర్

పంచదార-కప్పు
యాలకులు-తగినన్ని
జీడిపప్పు-తగినన్ని


తయారుచేయు విధానం:
క్యారేట్ని శుభ్రం చేసి చిన్న ముక్కలుగా తరగాలి.
తరువాత తగినన్ని నీళ్లు పోసి ఉడికించాలి,తరువాత మిక్సీలో వేసి ముద్దగా చేసుకోవాలి.
ఇప్పుడు పాలని బాగా మరగనివ్వాలి,మరిగిన తరువాత క్యారెట్ ముద్దని వెయ్యాలి.
తరువాత పంచదార వేసి బాగా కలపాలి. యాలకుల పొడి కూడా వెయ్యాలి.చివరగా జీడిపప్పు వేఇంచి దీనిలో కలిపితే రుచికరమైన , ఆరోగ్యకరమైన పాయసం రెడీ...


చిట్కా: అరటి కాయలు వంకాయలు కోసిన కాసేపటికే రంగు మారి కసరుగా మారతాయి. అయితే కోసిన వెంటనే కొంచెం మజ్జిగ కలిపిన నీటిలో వేసి ఉంచితే ముక్కలు అలా కాకుండా ఉంటాయి

Ingredients:

• 2 Vanilla pods

• 3 Egg yolks

• 70 gm Sugar

• 500 ml Double cream


How to make Vanilla Ice Cream:

• Divide the vanilla pods into two parts lengthwise and scrape out the seeds. Add the pods to the cream and bring it to a boil. Add sugar and stir until it dissolves.






• Whisk the egg yolks in a big bowl and now strain the cream onto them, keep stirring. Now pour ice cream into another bowl through a fine sieve
and whisk in the vanilla seeds.





• Place the mixture into an ice cream maker or large freezer proof dish.
• Freeze Vanilla Icecream till set for about 2 hours

Coconut Ladoo

Coconut Ladoo is a melt-in-the-mouth sweet dish, widely popular in the northern states of India. Learn how to make/prepare Coconut Ladoo by following this easy recipe.


Ingredients:
• 300 grams grated fresh coconut (about 1 1/2 cups)
• 1 tin Condensed Milk
• 200 grams (1 cup) suji (semolina)
• 1 cup powdered sugar (200 grams)

How to make Coconut Ladoo:
• Dry-roast the semolina in a kadhai or a flat bottomed vessel. As soon as it starts to get slightly brown, take it out and keep it aside.
• Add one cup grated coconut in the semolina. Keep the rest to wrap the ladoos for later on. Let the mixture cool a bit. Mix the ground sugar after a while. Add 3/4 tin Milkmaid and mix well. Now add all the rest of the ingredients and mix well.
• Make small balls of the mixture, about the size of a table tennis ball.





• Roll the ladoo in the dry coconut powder that we kept aside earlier.Keep in refrigerator once done. Serve it with hot puri.








Tip of the day:To keep coriander and other leafy greens fresh longer, wrap in newspaper and place in a perforated container in the fridge.

Ingredients:
• 5 Hard Boiled Eggs (halved)
• 1 Onion (chopped)
• 2 Green Chillies (chopped)
• Few Coriander Leaves (chopped)

• Oil for frying
• Salt to taste

How to make Egg Cutlet:
• Separate the egg yolks and keep it to the side.
• Take oil in a pan and shallow fry the green chillies and coriander leaves.
• Flavor it with garam masala, pepper and salt to taste. Pour into yolks and blend nicely.
• Stuff each egg white with cooked yolk and cover it up with bread crumbs.
• Heat oil in a pan and fry the stuffed side of eggs.
• Serve it hot with tomato sauce

హాయ్ ఈ రోజు కొంచెం కొత్తగా సరదాగా తెలుగులో వంట చేసే విధానం నేర్చుకుందాం ....... కావలసినవి:
గోధుమ పిండి-రెండు కప్పులు
మంచి నీళ్లు-తగినన్ని
ఉప్పు-తగినంత
నూనె-తగినంత
పరాటాలోకి కావలసినవి:
కాలిఫ్లవర్ తురుము-రెండు కప్పులు
పచ్చిమిర్చి-రెండు
సన్నగా తురిమిన కొత్తిమీర-ఒక స్పూన్
గరం మసాల-ఒక స్పూన్
కారం-అర స్పూన్
ఉప్పు-తగినంత
తయారుచేయు విధానం:
గోధుమ పిండి జల్లించి ఉప్పు,నీళ్లు వేసి చపాతీ పిండిలా కలపాలి.
కొత్తిమీర,పచ్చిమిర్చి,ఉప్పు,తురిమిన కాలిఫ్లవర్ అన్నీ బాగా కలిపి నీళ్లు పిండేయాలి.(పిండిన నీళ్లు గోధుమ పిండిలోకలిపేందుకు వాడొచ్చు.)
ఇందులో గరం మసాల,కారం వేసి బాగా కలపాలి.
పరాత పిండిని చిన్న చిన్న ముద్దలుగా చేసుకోవాలి.
ఒక్కో ముద్దనీ పూరీల వత్తాలి.
దాని మద్యలో కాలిఫ్లవర్ తురుము మిశ్రమాన్ని ఉంచి పూరి అంచుల పైకి మడవాలి.
దీన్ని మెల్లగా వేత్తుతూ చపాతిలా చేయాలి.
ఈ పరాతలని నూనె వేస్తూ పెనం మీద కాల్చాలి.


చిట్కా:నిమ్మకాయలు ప్రిజ్లో ఉంచి నిలువ పెట్టే కన్నా వాటిని ఒక పాత్రలో కొంచెం చల్లని నీరు పోసి దాచి ఉంచితే వడలిపోవు ఐతే పాత్రలో నీరు మాత్రం రోజూ మారుస్తూ ఉండాలి.

Choley Bhature

Choley Bhature is a lip-smacking and spicy recipe that is prevalent in the northern parts of India. Learn how to prepare Choley Bhature by following this easy recipe.





Ingredients:

• 2 cups All purpose flour (Maida)

• 1 pouch Yeast

• 1 cup Yogurt

• 2 tbsp Vegetable Oil

• 1 small can Garbanzo beans

• 1/2 tsp Ginger paste

• 1/2 tsp Garlic powder

• 1 tsp Cumin seeds

• 2 tbsp Oil

• 2 tbsp Cilantro

• 6-7 Mint leaves

• 1/2 tsp Turmeric Powder

• 1/2 tsp Chilly Powder

• 2-3 Bay Leaves

• 2-3 Cloves

• 1/2 tsp Garam Masala

• 1 Medium-sized finely chopped onion

• 1 Big tomato

• 1 1/2 cup Water

• Salt to taste


How to make Choley Bhature:

• Take yeast and soak in lukewarm water for 5-10 minutes.

• Take all other ingredients and mix well. To this add the yeast and make a soft dough like for chappatis.

• If need be add a little water and keep aside for 4-5 hours, the longer kept, the better it is.

• Roll like puri, but this needs to be kept thicker than poori. Fry like poori till both sides are golden brown.

• Take 2 tablespoons of oil in a pressure cooker and heat it.

• Add garlic powder and make it dark brown. Then add cumin seeds fry till they start spluttering. Now add bay leaves and cloves. Add diced onions. Fry then till they are light brown.

•Now add the rest of ingredients including water except the cilantro and mint leaves. Close the pressure cooker and wait for 3 whistles to come or cook for 5-7 minutes.

•Also garnish with thinly sliced long pieces of onion and a piece of lemon split up into 4 pieces.


Suggestion:

A combination of choley (chick peas) and bhature (fried breads that resemble poori), the dish is a typical Punjabi food, which is usually eaten as a breakfast or lunch, accompanied with lassi.

Aloo ki Sabzi is a popular north Indian recipe. Learn how to make /prepare Alu Ki Sabji by following this easy recipe.




Ingredients:
• 4 Potatoes (boiled and peeled)
• 2 tsp Turmeric Powder
• 1/2 tsp Red Chilli Powder
• 1 tsp Cumin Seeds
• Salt to taste
• 1-1/2 tbsp Oil

For the puree:
• 2 Onions
• 4 Cloves garlic
• 2 Green chilies
• 2 Tomatoes
• 1 Piece very small ginger


How to make Aloo Ki Sabzi:
• Cut the potatoes into small chunks and slightly mash them. Keep it aside.
• Blend all the ingredients of puree to form a smooth paste, keep it aside.
• Heat oil over medium heat in a non stick heavy base skillet and add cumin seeds.
• Allow spluttering and then add turmeric powder, red chili powder, salt and wait for 10 seconds.
• Now mix the puree and saute for 2-3 minutes until the raw smell is gone and oil appears on the sides of the skillet.
• Add potatoes and 2 cups of water.
• Simmer it for about 15 minutes.
• Aloo curry is ready to serve with rice or roti.


Tip of the day:Always mash potatoes when they are still quite hot. They mash more easily and can be finely mashed too.

Ingredients:

• 1 head Cauliflower (cut into 1-inch florets)

• 3 Potatoes (peeled and cut into 1-inch chunks)

• 1 tsp Salt

• In a large skillet heat the olive oil and then add the cumin seeds.

• When the cumin turns to golden brown add the onions and stir for 3 minutes.

• Add the tomatoes and stir for another 4 minutes.

• Now add the cauliflower and potatoes and mix thoroughly.

• Sprinkle curry powder and salt and cook for 5 minutes.

Apple Kheer

Apple Kheer is a popular vrat recipe especially prepared on Mahashivaratri. Learn how to make/prepare Apple Khir by following this easy recipe.



Ingredients:
• 2 liter Whole Fat Milk
• 2 Cooking Apples (peeled & diced into small pieces)
• ½ cup Sugar
• ½ tsp Cardamom Powder
• 5 Almonds (thinly slivered)
• 5 Pistachios (thinly slivered)
• 15-20 Saffron Strands

How to make Apple Kheer:
• Take milk in a pan and heat until it is condensed to 2/3 in quantity.
• Put apples with sugar in a fresh pan and cook until apples are soft. Then drain the apples and also reserve the liquid.
• Add the reserved liquid to the milk and boil it for 5 min.
• Now, add apple with remaining ingredients except almonds & pistachios and cook it for 3-4 min.
• Sprinkle almonds and pistachios over it.
• Serve hot or chilled.


Tip of the day: To clean the surface of vegetables like potato, radish, sweetpotato, carrots, etc. use a separate plastic scrubber or toothbrush kept for the purpose. Hold under running water and scrub.

• 3 to 4 Bread Slices

• 2 tsp Coriander Leaves (chopped)

• 1 pinch Turmeric Powder

• 1 pinch Chilli Powder

• 1/2 cup Onion (finely chopped)

• 1/2 cup Carrot (grated)

• 1/2 cup Zucchini (grated)


How to make Bread Cutlet:

• In a frying pan, heat oil.

• Add all the vegetables; fry it for 5 minutes; sprinkle salt and continue frying until they become tender.

• Dip bread in water and remove it immediately.

• Squeeze out the excess water and add it with the fried vegetables and spice powders.

• Make equal balls and shape them into small cutlets.

• Deep fry in oil till they turn golden in color.


Suggestions: Serve it hot with tea.

Ingredients:

• 4 cup Boiled rice

• 1 cup Urad dal

• Salt, to taste


How to make Chettinad Idli:

• Soak rice and urad dal separately for three hours and then grind them separately.

• Take a bowl and mix both the ingredients together to make a smooth batter.

• Now, add salt to it and mix again.

• Keep the batter for fermenting for 12 hours.

• Make idli in the idli cooker and cook it for 10 to 15 minutes on low flame.

• Keep the batters aside for 12 hours to get fermented.

• Serve with coconut chutney and sambhar.
